Key findings
- 1Plain mustard (yellow, Dijon, whole grain) has a short list of ingredients and no chemical additives
- 2In our analysis, mustard averages a Processing Score of 4.7, which is Level 2
- 3The pungency comes from a natural enzymatic reaction in the mustard seed, not from added chemicals
- 4Honey mustard and specialty flavored mustards may contain HFCS or modified food starch, making them more processed
Why is Mustard Level 2 on average?
Mustard production involves grinding mustard seeds (either yellow/white or brown/black varieties) and combining them with an acid (vinegar) to trigger the enzymatic reaction between myrosinase and sinigrin that creates the characteristic pungent flavor. This reaction is purely biochemical and requires no industrial additives. Turmeric provides the bright yellow color in American yellow mustard, and it is a whole spice, not a synthetic dye. The vinegar acts as both flavoring and preservative, giving mustard an essentially indefinite shelf life without any chemical preservatives. Dijon mustard substitutes verjuice (unripe grape juice) for vinegar, creating a different flavor profile with equally simple ingredients. In our analysis, mustard averages a Processing Score of 4.7, which is Level 2.

Frequently asked questions
Is French's yellow mustard processed?
French's Classic Yellow Mustard lists distilled vinegar, water, mustard seed, salt, turmeric, and paprika among its ingredients, with no chemical preservatives. Each product page shows its own score.
Is Dijon mustard ultra-processed?
No. Traditional Dijon mustard contains mustard seed, white wine or verjuice, water, and salt. Some store brands add sulfites as a preservative, which slightly increases processing.
Is honey mustard processed?
More than plain mustard. Honey mustard adds honey (or in cheaper versions, high fructose corn syrup) and sometimes modified food starch. Versions with HFCS are more processed than versions sweetened with real honey.
