The question

Is Cereal Ultra Processed?

It depends. Cereal averages Level 3 (Highly Processed) in our analysis. 37% of the 7,749 products we scored land at Level 3.

Most breakfast cereals are made by extrusion cooking, a high-temperature, high-pressure industrial process that shapes grain and strips nutrients that are then added back through fortification.

Key findings

  • 1Even cereals with a short ingredient list, like Cheerios, are made by industrial extrusion
  • 2In our analysis, breakfast cereals average a Processing Score of 6.2, which is Level 3
  • 3Granola and muesli are typically less processed alternatives

Why is Cereal Level 3 on average?

Cereal extrusion involves mixing grain flour with water, sugar, and additives, then forcing it through a die at 150-180C under extreme pressure. This denatures proteins and starches, creating the puffed/shaped textures consumers expect. Because extrusion destroys vitamins, manufacturers add synthetic versions back (fortification). Additional ingredients include BHT (preservative), trisodium phosphate (pH regulator), and various artificial colors and flavors.

How to read a cereal label

  1. 1

Short ingredient lists (5-6 items) indicate less processing: look for whole grain, sugar, salt

  2. 2

BHT "for freshness" is a synthetic antioxidant preservative

  3. 3

Fortified vitamins listed individually (like pyridoxine hydrochloride) indicate nutrients were destroyed and re-added

  4. 4

Grape-Nuts is one of few cereals that is baked rather than extruded

Frequently asked questions

Are Cheerios ultra-processed?

Although they have a relatively short ingredient list, Cheerios are produced via extrusion cooking and contain tripotassium phosphate and added synthetic vitamins. The O shape itself requires industrial processing. Search Cheerios to see their own average.

What is the least processed cereal?

Grape-Nuts (baked, not extruded), plain muesli (just mixed grains/nuts/fruit), and unflavored puffed wheat/rice (simple puffing) are among the least processed options.

Why are cereals fortified with vitamins?

Extrusion cooking destroys naturally occurring vitamins in grain. Manufacturers add synthetic vitamins back to maintain nutritional claims. This is why the vitamin list is so long on cereal boxes.
