Artificial flavors are synthetic compounds created through chemical synthesis to mimic natural flavors or produce specific taste experiences. These food additives are chemically manufactured rather than extracted from plant or animal sources, though many artificial flavor compounds are chemically identical to their naturally occurring counterparts. The flavor industry produces thousands of artificial flavor compounds that are combined by skilled flavorists to create specific taste profiles for ultra-processed foods and other manufactured products. The NOVA food classification system identifies artificial flavors as a defining characteristic of ultra-processed food formulations.

Artificial flavors are found in soft drinks, candy, chewing gum, ice cream, popsicles, gelatin desserts, cake mixes, frosting, flavored chips, instant noodles, flavored waters, energy drinks, breakfast cereals, and many convenience and snack food products.

Artificial flavors provide consistent, cost-effective flavoring for mass-produced food products. They offer advantages including greater stability during processing and storage, more predictable flavor intensity, lower production costs, and reliable supply that is not dependent on agricultural conditions. Artificial flavors enable manufacturers to create products with uniform taste regardless of batch size or production timing. Some flavor profiles — particularly certain fruit flavors — are more economically achieved through synthesis than through natural extraction.

Artificial flavors are synthesized through chemical processes in specialized facilities. Flavorists combine individual aroma compounds — such as esters, aldehydes, ketones, and other organic molecules — to replicate or approximate natural taste profiles. A single artificial flavor formulation may contain dozens of synthesized compounds along with carriers, solvents, and stabilizers. While individual molecules may be identical to those found in nature, they are produced through chemical synthesis rather than extraction from biological sources. The chemical purity of synthesized compounds can exceed that of naturally extracted equivalents.

Each individual artificial flavor compound must be reviewed for safety before it can be used in food products. Artificial flavors are regulated as food additives by the FDA, with the Flavor and Extract Manufacturers Association (FEMA) maintaining a GRAS list of approved flavor substances through its Expert Panel review process. The proprietary nature of flavor formulations means specific components are typically not disclosed to consumers beyond the label declaration "artificial flavor."
