The question

Is Special K Ultra Processed?

It depends on the product. Of the 663 Special K products we score, 306 are Level 4 (ultra-processed) and 148 are Level 3.

Special K is built on processed rice and wheat flakes, fortified with synthetic vitamins to replace nutrients the extrusion process removes.

Key findings

  • 1The extrusion process that shapes the flakes gelatinizes the starches and breaks down the grain's natural structure
  • 2Nearly every vitamin listed on the box is a synthetic additive replacing nutrients the grains naturally contained before industrial processing
  • 3A bowl of plain oatmeal or cooked wheat berries provides the intact grain with no industrial processing

What goes into Special K products?

Special K's rice and wheat flakes are produced through the same kind of industrial extrusion cooking used for most mass-market cereals. The grains are milled, mixed with sugar and flavorings, forced through an extruder at extreme temperature and pressure, then toasted. This process gelatinizes the starches and destroys naturally occurring B vitamins, iron, and other micronutrients, which are then added back in synthetic form. The end result is a flake several industrial steps removed from the intact grain it started as.

How to read a special k label

  1. 1

The lengthy vitamin/mineral fortification list reveals nutrients that were destroyed and re-added synthetically

  2. 2

Sugar appears early in the ingredient list

  3. 3

BHT "for freshness" is a synthetic antioxidant preservative

  4. 4

Compare the nutrition label to plain cooked wheat berries or brown rice to see what processing removed

Frequently asked questions

Is Special K actually good for weight loss?

That is a nutrition question rather than a processing one. What we measure is that the flakes are extruded and gelatinized, several industrial steps from the intact grain.

Why does Special K have so many added vitamins?

Extrusion cooking at high temperature and pressure destroys heat-sensitive vitamins naturally present in rice and wheat. The long list of added vitamins (folic acid, niacinamide, pyridoxine hydrochloride) are synthetic replacements for what the processing removed.

Is Special K Protein better than regular Special K?

Special K Protein adds soy protein isolate; itself a heavily processed ingredient extracted using hexane solvent. It adds further industrial ingredients to the same extruded base. Of the 663 Special K products we score, 306 are Level 4 (ultra-processed) and 148 are Level 3.
