The question

Is Juice Ultra Processed?

Usually not. Juice averages Level 2 (Processed) in our analysis. 42% of the 9,899 products we scored land at Level 2.

Even juice sold as not from concentrate goes through pasteurization, deaeration, and flavor pack re-addition, industrial steps well beyond squeezing fruit.

Key findings

  • 1"Not from concentrate" juice still undergoes pasteurization, deaeration, tank storage for up to a year, and flavor pack re-addition; far from fresh-squeezed
  • 2Flavor packs are proprietary blends of citrus essences added to restore taste lost during industrial processing; this step has no home-kitchen equivalent
  • 3Juice drinks and cocktails containing as little as 10% juice are far more processed, with HFCS, artificial colors, and preservatives making up the bulk
  • 4Fresh-squeezed juice is minimally processed but deteriorates within 3-5 days; its short shelf life is precisely because it skips industrial preservation

Why is Juice Level 2 on average?

The "not from concentrate" label suggests minimal processing, but the production reality is more complex. After squeezing, juice is pasteurized at high temperatures, then stripped of oxygen (deaeration) to prevent spoilage during storage. This process also removes most volatile flavor and aroma compounds. The juice is stored in aseptic tanks for up to a year. Before packaging, manufacturers add proprietary "flavor packs"; concentrated essences derived from orange peel oils and other citrus byproducts, to restore the taste and aroma lost during processing. "From concentrate" juice undergoes an additional step: water is evaporated under vacuum to reduce volume for transport, then reconstituted with water at the bottling facility. Juice drinks containing as little as 10% juice are far more processed, padded with water, high fructose corn syrup, citric acid, artificial colors, and "natural flavors." Fresh-squeezed juice is the only truly minimally processed option, but it deteriorates within 3-5 days without pasteurization. In our analysis, juice products average a Processing Score of 4.1, which is Level 2.

How to read a juice label

  1. 1

"100% juice" does not mean minimally processed; it means no added sweeteners, but the juice itself still undergoes industrial pasteurization, deaeration, and flavor pack restoration

  2. 2

Check for added sugars vs natural sugars; "juice drinks" and "juice cocktails" (10% juice) are padded with HFCS or sucrose

  3. 3

"From concentrate" means water was evaporated for transport and re-added at bottling (which is an additional industrial step beyond "not from concentrate"

  4. 4

Check serving size: labels show 8oz but many bottles are 16-20oz, doubling the actual sugar intake

Frequently asked questions

Is orange juice ultra-processed?

Most commercial orange juice is processed well beyond squeezing: even "not from concentrate" varieties undergo pasteurization, deaeration, tank storage, and flavor pack re-addition. 100% juice has no synthetic additives, but it is significantly more processed than squeezing an orange. In our analysis, juice products average a Processing Score of 4.1, which is Level 2.

Is juice from concentrate worse than not from concentrate?

From a processing standpoint, "from concentrate" adds one extra step; evaporating and reconstituting water. Both types undergo pasteurization, deaeration, and flavor pack addition. The processing difference between the two is smaller than most consumers assume.

Is fresh-squeezed juice processed?

Fresh-squeezed juice is minimally processed. Squeezing fruit is a simple mechanical extraction with no additives or industrial steps. However, it deteriorates within 3-5 days without pasteurization, which is why commercial juice requires industrial processing for shelf stability.

Is juice healthier than soda?

This analysis evaluates processing level, not health outcomes. From a processing standpoint, 100% juice is less processed than soda, which adds sweeteners, acids, and flavorings to carbonated water. However, an 8oz glass of orange juice contains roughly the same amount of sugar (21g) as 8oz of cola (26g). The sugar source differs (fructose from fruit vs HFCS) but the quantity is comparable.
