What are processed fruit products?
Processed fruit ingredients are concentrated, extracted, or industrially modified fruit derivatives used in food manufacturing for sweetening, flavoring, coloring, and functional purposes. These include fruit juice concentrates, fruit extract, fruit powder, fruit flavor, fruit pectin, fruit fiber, and dehydrated fruit pieces reconstituted for use in processed foods. While derived from real fruit, these ingredients have been significantly transformed from their original whole fruit form, often with the primary purpose of providing sweetness or color. The use of fruit juice concentrates as sweeteners in place of sugar is a common formulation pattern in processed and ultra-processed foods, where they serve functional roles distinct from whole fruit consumption.
32,179 products in our database contain processed fruit products. 15,678 of them (49%) are Level 4, the most processed of our four levels.
Which foods contain processed fruit products?
Processed fruit ingredients are found in fruit snacks, gummy candies, fruit-flavored beverages, cereal bars, flavored yogurt, fruit spreads, frozen fruit bars, breakfast cereals, baby food, fruit-flavored candy, cocktail mixers, and many products marketed as containing fruit or fruit flavors.

Processed Fruit Products can appear in ingredient lists under several names. If you see any of the following, this is the ingredient family you are looking at:
Function
Processed fruit ingredients serve specific functional roles in food manufacturing. Fruit juice concentrates act as sweeteners that allow products to claim "sweetened with fruit juice" rather than listing sugar. Fruit extracts and powders provide concentrated fruit flavor and color without the moisture and bulk of whole fruit. Fruit pectin serves as a natural gelling agent in jams, jellies, and confections. Fruit fiber is added to increase dietary fiber content for nutritional claims. Dehydrated fruit pieces provide visible fruit inclusions in cereals and snack bars at lower cost than freeze-dried alternatives.
Sources
Processed fruit ingredients are produced through various industrial concentration and extraction processes. Fruit juice concentrate is made by extracting juice and evaporating water under vacuum to create a concentrated syrup with 4-6x the sugar density of the original juice. Fruit extracts use solvents to isolate specific flavor or color compounds. Fruit powders are produced by spray-drying or freeze-drying fruit juice or puree. Fruit pectin is extracted from citrus peels or apple pomace through acid hydrolysis. These processes fundamentally alter the composition and properties of the original fruit.
Health considerations
Fruit juice concentrates are high in sugar and calories per unit weight compared to whole fruit, without the fiber content of whole fruit. Products sweetened with fruit juice concentrate may contain similar sugar levels to those sweetened with conventional sugar. Fruit-based ingredients retain the potential for sulfite content if treated during processing. The Dietary Guidelines for Americans distinguish between whole fruit and fruit juice in their recommendations.

Regulatory
The FDA regulates fruit content claims and the use of terms like "made with real fruit" on product labels. Fruit juice and fruit juice concentrate have standards of identity specifying minimum Brix (sugar concentration) levels. Products using fruit juice concentrate as a sweetener must list it in the ingredient statement. Added sugars from fruit juice concentrates must be included in the added sugars line on the Nutrition Facts label per FDA guidance. The EU regulates minimum fruit content in products labeled as fruit-containing.
